Ingredients
1 snake gourd,
cut into 2cm slices
2 tbsps dhal (lentils) , soaked for 15 minutes, then boiled till soft
1 carrot, sliced thinly
3 tbsps oil
1 big onion, diced
2 cloves garlic, minced
3cm piece of ginger smashed
3 dried chillies, seeded, washed and cut into 3 pieces each
2 tsps black mustard seeds
½ tsp turmeric powder
2 sprigs of curry leaves
½ tsp sea salt
(or to taste)
100ml water
Method
1. Heat oil in wok till slightly smoking. Fry the dried chillies. Add the big onion, then the ginger and garlic. Fry till browning.
2. Toss mustard seeds in this mixture, then add turmeric powder and curry leaves.
3. Put in the snake gourd and carrot and stir a few times in the wok. Add the dhal and salt and combine well.
4. Add water and cover for a minute. Taste and dish out.

Snake gourd is a common South Indian vegetable available at many Indian stores
