Ingredients
4 green apples, cubed with skin
1 large red onion, sliced into rings
3 pips garlic, minced
1 tsp ginger, minced
2 tbsp cooking oil
1 tsp mustard seeds
2 tbsp coriander leaves, chopped
2 dried chillies, snipped into tiny pieces
1 sprig of curry leaves
Salt to taste
Method
1. Heat oil in wok, put in mustard seeds. When seeds begin to sputter, add onion rings, garlic and ginger. Stir-fry till aromatic.
2. Add apple, dried chillies, curry leaves and salt.
3. When apple softens, add coriander leaves and continue cooking for one minute. Serve hot.
Note: An unusual, tangy vegetable dish with a distinctly South Indian flavour. Apples can also be substituted with another vegetable like chopped raw spinach, cubed raw eggplant, boiled sweet potato or boiled beans.
