Chicken Wings with Oyster Sauce
Ingredients
2 1/2 pounds chicken wings (about 15)
Marinade
3 tbs oyster sauce
2 tbs light soy sauce
2 tbs Chinese rice wine or dry sherry
1 garlic clove, minced
1 green onion, diced
salt and pepper, to taste
Preparation
Preheat grill to 350 degrees F.
In a small bowl, combine all the marinade ingredients.
Place the chicken in a shallow glass baking dish or on aluminum foil and brush with part of the marinade.
Cook the wings for approximately 1 hour, turning over at least once, and brushing with the marinade 2 or 3 times during cooking.
Grilled Asian Pork Tenderloin
Ingredients
1 pound pork tenderloin
2 cups broccoli
2 cups carrots, thinly sliced
1 red bell pepper, cleaned and cut into thin strips
1 8 ounce can of sliced water chestnuts, drained
2 green onions, sliced
2 cloves garlic minced
4 tablespoons soy sauce
3 teaspoons sesame oil
1 teaspoon fresh ginger
aluminum foil
hot, cooked rice
Preparation
Remove most of the stems from the broccoli leaving mostly the flowering part.
Preheat grill. Divide all ingredients by 4. Cut four large pieces of aluminums foil.
Place tenderloin on hot grill and sear the outside making good grill marks. Grill about 10 minutes.
Slice tenderloin into ¼ inch slices and divide into 4 equal amounts. Place one-fourth of the pork, broccoli, water chestnuts, red pepper and onions in the center of one piece of foil. Season with soy sauce, sesame oil and ginger. Fold and seal foil. Repeat until all four packets are made.
Place on hot grill for 10-12 minutes. Serve with rice.
Ingredients
1 pound ground pork
1/4 cup bread crumbs
1 egg
1 tablespoon watercress, chopped
2 cloves garlic, minced
1 teaspoon ginger, minced
1 tablespoon soy sauce
2 tablespoons hoisin sauce
1 small onion sliced
cilantro sprigs
bean sprouts
Preparation
Preheat grill.
Mix pork, bread crumbs, egg, watercress, garlic, ginger and soy sauce together. Form into hamburger patties.
Grill. Top with hoisin sauce, onion slices, cilantro and bean sprouts.
Chinese Potato Salad
Ingredients
5-6 medium potatoes (about 2 1/2 pounds)
4 slices bacon, well-cooked and crumbled
3/4 cup chopped bok choy
1 red pepper, diced
1/2 cup chopped green onion
1/4 cup chopped cilantro
Sauce
1 1/3 cup mayonnaise
1 tsp sugar
1 tbs soy sauce
1-2 tsp sesame oil
1/8-1/4 tsp hot mustard powder
1/8 tsp salt
Preparation
Boil the potatoes until cooked but still firm.
Cut into potato salad-sized chunks.
Mix the ingredients for the sauce together, using more or less sesame oil and host mustard according to taste (the more the better, up to a point...).
Put all solid ingredients together in a large bowl, then add the sauce and mix well. Chill.
