Fusion fiesta sizzles in Vancouver

Fusion food comes with only one rule - the dish must have certain elements and flavours of the different culinary cultures from which it is drawing inspiration.
Recently, Vancouver has begun embracing the fusion food scene with many local chefs cooking up their own signature dishes in their mobile kitchens and food trucks parked throughout the city.
Vancouver's Roaming Dragon food truck prides itself on being 'authentically un-authentic' creating delicious dishes such as their Indonesian Beef Radang Poutine which combines French-Canadian and Indonesian flavours.
While Pig On The Street food truck has created a bacon wrap with Southern, British and Canadian flavours.
Popular and permanently established restaurants like Green Lettuce (on Kingsway at Nanaimo) exist because of fusion experiments that took place over a century ago.
Their Chinese Haka-style dishes served with a spicy Indian touch are the consequence of the Indo-Chinese experience of Southern Chinese Haka people who emigrated to Indian cities like Calcutta in the 19th century.
Fusion food is a serendipitous results of different cultures coming together, embracing each others differences and creating something new and wonderful, and after all couldn't the world use a little more of that.
Canada is a fusion of many cultures - a century from now perhaps it will be Canadian style fusion cuisine eateries that will be all the rage across the world?
